Sweet and Spicy Chicken Hoagie

I love it when I think of a new recipe and it actually turns out awesome!  Nothing stinks more then thinking a recipe is going to be good and it being awful.  So we eat a lot of chicken around here, but we are pretty sick of the same old recipes that I have been making.  So I was on a mission to make something new and hope that it would turn out. 

Last week I had made this dressing for Taco's that I had gotten from The Pioneer Woman.  When we put the dressing on the Taco's I thought that this would be good with burgers or even a warm sandwich.  So that is how I made this recipe, based on the sauce. 

I of course didn't take pictures because first I wasn't thinking and second I wasn't sure if it would turn out.  If you like sandwiches then trust me you want to make this!

Sweet and Spicy Chicken Hoagie

Ingredients:
Rolls
Grilled Chicken
Lettuce
Tomato
Cheese
1/4 cup Mayo (I used Miracle Whip)
1/4 cup Salsa
1/4 cup Sour Cream
Dry Ranch Seasoning
Hot Sauce

Grill the chicken up, season how you like, I used Garlic Power, Salt and Pepper and dice the chicken when it is done cooking.  While the chicken is cooking go ahead and make your sauce.  The original recipe called for a tablespoon of the ranch mix, but it was too much for me so I just sprinkled a little at a time till I liked the flavor.  Hot sauce is optional, and you put in as much as you like. 

Place your hoagie rolls under the broiler to crisp up, meanwhile slice your tomato and shred your lettuce (I was lazy and bought preshredded iceberg).  Take the rolls out of the oven and place the cooked diced chicken on the roll until the whole bottom is covered.  Spread the sauce all over the chicken and top with your choice of cheese (we used Swiss) and bake until the cheese is melted.

When the cheese has melted take it out of the oven, on the other side of the bun put more of the sauce (if you want, Ranch might be good too) lay down the lettuce and tomato and close the sandwich up and enjoy! 

This is something I will be making again!

My Menu

It's been awhile since I posted a menu, and I don't have a reason for it.  I had a menu but some days I am just plain busy (hard to imagine I know)  So here is my menu for this week.  I am hoping to get to the grocery store this week sometime as were getting down to the nitty gritty staple wise.  But first I want to make a menu for the month so I can stay on budget and not throw a bunch of "extra" stuff that we don't need in the cart!

Sunday:  BBQ and Hot Chicken Legs, mixed veggies and rice

Monday:  Salisbury Steak, mashed potatoes and green beans

Tuesday:  Chicken Fettuccine Alfredo, and garlic bread

Wednesday:  Taco Soup and quesadilla's

Thursday:  Either Italian Chicken Melts (I have made these once before) or French Dips with fries and pasta salad

Friday:  Pizza Night

Saturday:  ???  Not sure yet, depends on my grocery list.

My friend Lee and her son Ethan are hopefully coming out this week to visit as well so my menu may change depending on what she feels like eating, although she is not that picky I just want to make sure that she will like what I make.  Have a great week!!

Morgan's 5th Birthday

 
I can't even believe that Morgan is five already!  Where did the time go?  I can remember the first month after bringing her home from the hospital and now she is going to be starting kindergarten next year! 

This year for her birthday we decided to not have a birthday party for her, it was a VERY SAD decision that we made but there was reasoning for it.  Two of the kids that could of come were going to be out of town, our neighbors have moved out of state and her cousin lives out of state so there was only one kid that might have been able to make it.  We didn't want to have a kids birthday party with all adults and possible only one kid. 

 
So what we did was Tyson took Thursday and Friday off and we made the weekend all about her.  We let her pick what she wanted to do.  One of the things she wanted to do was go to Chuck E Cheese, she really loves that place and does pretty well with the games, but mostly likes the rides.  When it was time to cash in her tickets she really wanted Cotton Candy, but didn't have enough tickets.  The nice lady decided to go ahead and give her the Cotton Candy anyways, that made her day. 

We also let her pick out a place to eat out at and she picked Burger King (which shocked me, we rarely eat there and all week she had been talking about Red Robin), I think she just wanted to go to a place with a play land, which was fine it was her birthday after all.  We did Burger King and Chuck E Cheese on Friday, with plans of taking her bowling on Saturday and have cake after dinner.

 
I took her to the store to pick out her cake and treated her to a happy meal.  When we headed home the day just went downhill.  She wasn't listening, she was being mean to her sisters, she was having tantrums over the smallest things, so we said no to bowling....and she was upset for a bit, but once the cake came out she forgot all about it.  I felt bad but she wasn't listening and we have to stick to our guns!  Overall she had a great weekend and next year will be different since she will hopefully make some friends in her school.

My Menu

I know it is Wednesday and I am just now posting my menu...I still have Morgan's Birthday update to do but I have to get pictures downloaded before I post it.  My goal is to get that done tomorrow.  Here is my menu for the week.  I am only doing one new thing this week and it is a side dish, I just wanted to stick to the basics!

Sunday:  Superbowl:  Beer Can Chicken, mashed potatoes and green beans (normally I make appetizer, but it is time consuming and to keep the kids out of Tyson's hair I made something simple!

Monday:  Pork Chops, twice baked potatoes and corn

Tuesday:  Spaghetti and Garlic Bread

Wednesday:  Taco Soup, quesadilla's and mini tacos

Thursday:  Ranch Chicken (from PW, I have made it before!)  Creamy Garlic noodles (new recipe for me, read it here) and balsamic roasted veggies

Friday:  Homemade Cheeseburgers, caramelized onions, french fries and macaroni salad

Saturday:  Appetizers:  Spicy Chicken bites, potato skins and crab stuffed mushrooms
