My Menu

It is another week and it is cold here!  I love the winter time because I can make all my yummy comfort food!  I still have been meaning to update on the girls, hopefully I can get to that this week sometime!  Have a great week!!!


Sunday:  White Chicken Enchiladas and Spanish Rice

Monday:  Slow Cooker French Dips, Pasta Salad and Fries

Tuesday:  Pork Chops, Creamy Noodles and Green Beans

Wednesday:  Meatloaf, Mashed Potatoes and Corn

Thursday:  Crock Pot Chicken Phillys (we haven't had this yet), and Fries

Friday:  Pizza Night

Saturday:  Steak, Mushrooms and Onions, and Baked Potatoes

My Menu

Correction:  Because I am an air head and because I have three kids, because Halloween is right around the corner, because Christmas is two months away and Morgan's birthday is three months away.  I messed up when the BSU game is and that changes my menu!


I need to get back on track with my menu situation.  It just makes my nights easier when I know what I am making!  I am loving the fall weather, and I am ready to cook some comfort food!!!


Sunday:  Crockpot Cube Steak, Mashed Potatoes, Creamed Corn and Crescent Rolls

Monday:  Pork Chops, Au Gratin Potatoes and Green Beans

Tuesday:  Hamburger Sandwich (new recipe for me, I found it here), Pasta Salad and Fries

Wednesday: Sausage and Peppers, Rigatoni and Garlic Bread

Thursday:  Crockpot Chicken Philly Cheesesteaks (another new recipe), Salad and Onion Rings

Friday:  Appetizers.  Chicken Wings, potato skins and some kind of dip

Saturday: Cheeseburgers, hotdogs and fries (we have friends coming over)

My Menu

I know it has been a long time since I posted anything.  I have just been trying to get a "new" routine since all the girls are in school this year!  Right now Cameryn and Jaidyn are attending a preschool at an elementary school.  This program that they are in is through the state.  If you have a child with speech delay, once they turn 3 they are required to go through the school district rather then having their personal therapist come to the house.  Morgan started kindergarten as well (where did the time go?) and she is at a completely different elementary school.  Right now I feel nothing short of a chauffeur!!!

Here is the deal, Cameryn and Jaidyn can ride the bust to and from school,  however since they are so shy I knew that there was NO way they would get on the bus.  So the past 3 weeks I have been dropping them off at 9 am and picking them up at 12 noon.  Today they rode the bus home and will continue for the week in hopes that I can get them on the bus in the morning starting next week and I won't have to be driving back and forth as much.  Originally we were going to have Morgan go to kindergarten at the same time that the twins were in school, but she got put in the afternoon class which is 1255-350.  Now I could of had that changed but that meant I would have to get her to the bus stop, drop the girls off, pick the girls up 15 minutes early to get Morgan from school.  Her school only buses in that am and home in the pm, there is no middle pick up.  So I decided it was best to keep it where it is at.  It is just better overall and I get some one on one time with her!

So, with that said, I haven't had a lot of time to blog as I am busy driving EVERY WHERE while running errands, , cleaning the house, cooking, etc.  I will try to get another post done this week along with some pictures so I can update all of you!  Have a great week!

Monday:  Sweet and Sour Chicken (yummy, recipe here), fried rice (my favorite) and egg rolls

Tuesday:  Spaghetti, salad and garlic bread

Thursday:  Pork Chops, cheesy potatoes and green beans

Friday:  Beef and snow peas (from PW, haven't had it yet) rice and egg rolls

Saturday:  Roasted chicken legs, and potatoes

My Menu

I haven't posted anything in a long time!  I have to say that I have been seriously busy, the girls have been keeping me on my toes more and more each day.  I plan on doing a separate update for the kids, but for now I just want to start to get back on track with my menu for the week. 


Sunday:  Beef Fajitas (I used our leftover kabobs and it was delicious) and Fries

Monday:  Spaghetti Batch (it is going to be 110 degrees here, so I want to use the crock pot so we don't heat up the house), garlic bread and salad

Tuesday:  Honey Mustard Pork Chops (new recipe and its in the crock pot), Twice Baked Potatoes and Corn

Wednesday:  BLT's and Fries

Thursday:  Happy Fourth of July!  Chorizo's, Roasted Potatoes and Pasta Salad

Friday:  Homemade Pizza on the Grill

Saturday:  Appetizers, Spicy Chicken Bites, Potato Skins and Shrimp Cocktail

It is going to be HOT here this week so I am trying to do most of my cooking either on the grill or in the crock pot so we don't heat up the house.  I like it when it is warm but 110 degrees is outrageous to me especially when I have three kids who don't like to be cooped up in the house!  I'm off to do some more laundry get the kids bathed and run some errand before it gets too hot outside!  Have a great week!!!

Easter Sunday

I meant to get to this post last week but I was just too plain busy with appointments, the kids, the house etc.

Before I get to Easter Sunday, let me back up a few days.  On Thursday my niece and the girls cousin Maggie flew in from Washington for the weekend and I got to pick her up at the airport and she got to stay the night with us and have a sleepover with Morgan.  On Friday, her Nanny (her dad's mom) came out to my house where we had lunch and then took the kids to the zoo where we met up with all the other family in town.

The girls had a blast, and were tuckered out by the end of the night.  On Easter Sunday, we headed over to Aunt Donna's and Uncle Bobby's house for breakfast and an egg hunt.  It was nice to be able to spend the day with family and it was nice to have Maggie there as well so Morgan and her got to spend the day together!

That afternoon  Patty and Mike (Dan's parents, aka Nanny and Poppy) brought Maggie to our house to have Easter dinner.  Maggie had to fly out that night so it was better for them to come to our house so they didn't have to drive an hour back home to just turn around later to go to the airport.  Plus it was nice to be able to spend time with Maggie since we haven't seen her in a long time!

It was nice and I was very sad to see her leave!  Hopefully we will be able to see her again soon along with Dan and Jamie!

My Menu

It's time for my weekly menu.  It is starting to warm up here more so I am looking forward to breaking out the BBQ more, it is nice when it starts to get warm out because the kids aren't cooped up in the house and get some fresh air and play hard out back!

Sunday:  Chicken Fried Steak, Mashed Potatoes, Corn and Rolls

Monday:  Kielbasa, Rice and Green Beans

Tuesday:  Crock pot Chicken and Dumplings (this is a new recipe for me and I found it here) and Salad

Wednesday:  Pork Chops, Noodles and Mixed Veggies

Thursday:  Hawaiian Burgers (Teriyaki, Pineapple and Swiss), Baked Beans and Tator Tots

Friday:  Crock pot Creamy Ranch Chicken (another new recipe for me and it was found here), served over Angel Hair Noodles, Salad and Garlic Bread

Saturday:  Tyson is probably going out with a friend, if so I am just going to pick up pizza for me and the girls.

Like I said I can't wait to start using the BBQ, For some reason I really struggle to be motivated and cook on Fridays, so I plan on alternating between the crock pot and the BBQ because for some reason if I am using either of those it is alot easier for me to cook and less likely we will be ordering out and we can save the money!  3 girls are expensive to feed, plus if Tyson is going out Saturday I would rather treat them to pizza (Little Caesars, $5.00 pizza--which Tyson won't eat)  Have a great week!

Sweet and Spicy Chicken Hoagie

I love it when I think of a new recipe and it actually turns out awesome!  Nothing stinks more then thinking a recipe is going to be good and it being awful.  So we eat a lot of chicken around here, but we are pretty sick of the same old recipes that I have been making.  So I was on a mission to make something new and hope that it would turn out. 

Last week I had made this dressing for Taco's that I had gotten from The Pioneer Woman.  When we put the dressing on the Taco's I thought that this would be good with burgers or even a warm sandwich.  So that is how I made this recipe, based on the sauce. 

I of course didn't take pictures because first I wasn't thinking and second I wasn't sure if it would turn out.  If you like sandwiches then trust me you want to make this!

Sweet and Spicy Chicken Hoagie

Ingredients:
Rolls
Grilled Chicken
Lettuce
Tomato
Cheese
1/4 cup Mayo (I used Miracle Whip)
1/4 cup Salsa
1/4 cup Sour Cream
Dry Ranch Seasoning
Hot Sauce

Grill the chicken up, season how you like, I used Garlic Power, Salt and Pepper and dice the chicken when it is done cooking.  While the chicken is cooking go ahead and make your sauce.  The original recipe called for a tablespoon of the ranch mix, but it was too much for me so I just sprinkled a little at a time till I liked the flavor.  Hot sauce is optional, and you put in as much as you like. 

Place your hoagie rolls under the broiler to crisp up, meanwhile slice your tomato and shred your lettuce (I was lazy and bought preshredded iceberg).  Take the rolls out of the oven and place the cooked diced chicken on the roll until the whole bottom is covered.  Spread the sauce all over the chicken and top with your choice of cheese (we used Swiss) and bake until the cheese is melted.

When the cheese has melted take it out of the oven, on the other side of the bun put more of the sauce (if you want, Ranch might be good too) lay down the lettuce and tomato and close the sandwich up and enjoy! 

This is something I will be making again!

My Menu

It's been awhile since I posted a menu, and I don't have a reason for it.  I had a menu but some days I am just plain busy (hard to imagine I know)  So here is my menu for this week.  I am hoping to get to the grocery store this week sometime as were getting down to the nitty gritty staple wise.  But first I want to make a menu for the month so I can stay on budget and not throw a bunch of "extra" stuff that we don't need in the cart!

Sunday:  BBQ and Hot Chicken Legs, mixed veggies and rice

Monday:  Salisbury Steak, mashed potatoes and green beans

Tuesday:  Chicken Fettuccine Alfredo, and garlic bread

Wednesday:  Taco Soup and quesadilla's

Thursday:  Either Italian Chicken Melts (I have made these once before) or French Dips with fries and pasta salad

Friday:  Pizza Night

Saturday:  ???  Not sure yet, depends on my grocery list.

My friend Lee and her son Ethan are hopefully coming out this week to visit as well so my menu may change depending on what she feels like eating, although she is not that picky I just want to make sure that she will like what I make.  Have a great week!!

Morgan's 5th Birthday

 
I can't even believe that Morgan is five already!  Where did the time go?  I can remember the first month after bringing her home from the hospital and now she is going to be starting kindergarten next year! 

This year for her birthday we decided to not have a birthday party for her, it was a VERY SAD decision that we made but there was reasoning for it.  Two of the kids that could of come were going to be out of town, our neighbors have moved out of state and her cousin lives out of state so there was only one kid that might have been able to make it.  We didn't want to have a kids birthday party with all adults and possible only one kid. 

 
So what we did was Tyson took Thursday and Friday off and we made the weekend all about her.  We let her pick what she wanted to do.  One of the things she wanted to do was go to Chuck E Cheese, she really loves that place and does pretty well with the games, but mostly likes the rides.  When it was time to cash in her tickets she really wanted Cotton Candy, but didn't have enough tickets.  The nice lady decided to go ahead and give her the Cotton Candy anyways, that made her day. 

We also let her pick out a place to eat out at and she picked Burger King (which shocked me, we rarely eat there and all week she had been talking about Red Robin), I think she just wanted to go to a place with a play land, which was fine it was her birthday after all.  We did Burger King and Chuck E Cheese on Friday, with plans of taking her bowling on Saturday and have cake after dinner.

 
I took her to the store to pick out her cake and treated her to a happy meal.  When we headed home the day just went downhill.  She wasn't listening, she was being mean to her sisters, she was having tantrums over the smallest things, so we said no to bowling....and she was upset for a bit, but once the cake came out she forgot all about it.  I felt bad but she wasn't listening and we have to stick to our guns!  Overall she had a great weekend and next year will be different since she will hopefully make some friends in her school.

My Menu

I know it is Wednesday and I am just now posting my menu...I still have Morgan's Birthday update to do but I have to get pictures downloaded before I post it.  My goal is to get that done tomorrow.  Here is my menu for the week.  I am only doing one new thing this week and it is a side dish, I just wanted to stick to the basics!

Sunday:  Superbowl:  Beer Can Chicken, mashed potatoes and green beans (normally I make appetizer, but it is time consuming and to keep the kids out of Tyson's hair I made something simple!

Monday:  Pork Chops, twice baked potatoes and corn

Tuesday:  Spaghetti and Garlic Bread

Wednesday:  Taco Soup, quesadilla's and mini tacos

Thursday:  Ranch Chicken (from PW, I have made it before!)  Creamy Garlic noodles (new recipe for me, read it here) and balsamic roasted veggies

Friday:  Homemade Cheeseburgers, caramelized onions, french fries and macaroni salad

Saturday:  Appetizers:  Spicy Chicken bites, potato skins and crab stuffed mushrooms

My Menu

I know it has been awhile since I have been on here.  I have a ton of updates to post about but just have been way to busy to get them done!  This last month my friend and her son came out to visit for the week, it was so nice to have a girlfriend around to talk to, we stayed up and giggled, watched t.v. and ate ALOT of ice cream!  I didn't realize how much I miss have a constant girlfriend around to be able to do that with. The kids are going stir crazy since it has been so cold and the snow is not melting so I have been trying to find new things to entertain them with so that has kept me pretty busy along with all the other household chores.  I have had a menu, but like I said posting has been put on the back burner. 

I do want to share a new recipe I tried on Friday night, Tyson said that I outdid myself with the recipe, you know it is good when it was a NEW recipe and he liked it that much (he doesn't care for "new" things sometimes)  Anyways, I was craving Sausage and Peppers and found Giada De Laurentiis recipe HERE, it was DELICIOUS!! 

Also, it was Morgan's birthday on Saturday and we let her choose where to eat and what to do, she chose Burger King (I was surprised, I thought she was going to say Red Robin, but I think she wanted to go somewhere with a play land) and she also picked Chuck E Cheese for the games

Anyways, here is my menu this week and I am going to try to get a few more posts updated this week!  Have a great week everyone!!

Sunday:  Balsamic Brown Sugar Pork Tenderloin (new recipe, found HERE), Au gratin Potatoes and green beans

Monday: Lasagna, Homemade Olive Garden Breadsticks

Tuesday:  Fried Chicken, Rice and Corn

Wednesday: Beef and Bean Burritos (from PW, made them before and they are good), Tator Tots

Thursday:  Breakfast for Dinner, Bacon, Eggs, Hasbrowns, and Pancakes

Friday:  ??  Free pass day, maybe pizza, maybe Chinese?

Saturday: Cheese steak sandwiches (new recipe I have been wanting to try HERE), fries and pasta salad
