My Menu

I haven't posted anything in a long time!  I have to say that I have been seriously busy, the girls have been keeping me on my toes more and more each day.  I plan on doing a separate update for the kids, but for now I just want to start to get back on track with my menu for the week. 


Sunday:  Beef Fajitas (I used our leftover kabobs and it was delicious) and Fries

Monday:  Spaghetti Batch (it is going to be 110 degrees here, so I want to use the crock pot so we don't heat up the house), garlic bread and salad

Tuesday:  Honey Mustard Pork Chops (new recipe and its in the crock pot), Twice Baked Potatoes and Corn

Wednesday:  BLT's and Fries

Thursday:  Happy Fourth of July!  Chorizo's, Roasted Potatoes and Pasta Salad

Friday:  Homemade Pizza on the Grill

Saturday:  Appetizers, Spicy Chicken Bites, Potato Skins and Shrimp Cocktail

It is going to be HOT here this week so I am trying to do most of my cooking either on the grill or in the crock pot so we don't heat up the house.  I like it when it is warm but 110 degrees is outrageous to me especially when I have three kids who don't like to be cooped up in the house!  I'm off to do some more laundry get the kids bathed and run some errand before it gets too hot outside!  Have a great week!!!

Easter Sunday

I meant to get to this post last week but I was just too plain busy with appointments, the kids, the house etc.

Before I get to Easter Sunday, let me back up a few days.  On Thursday my niece and the girls cousin Maggie flew in from Washington for the weekend and I got to pick her up at the airport and she got to stay the night with us and have a sleepover with Morgan.  On Friday, her Nanny (her dad's mom) came out to my house where we had lunch and then took the kids to the zoo where we met up with all the other family in town.

The girls had a blast, and were tuckered out by the end of the night.  On Easter Sunday, we headed over to Aunt Donna's and Uncle Bobby's house for breakfast and an egg hunt.  It was nice to be able to spend the day with family and it was nice to have Maggie there as well so Morgan and her got to spend the day together!

That afternoon  Patty and Mike (Dan's parents, aka Nanny and Poppy) brought Maggie to our house to have Easter dinner.  Maggie had to fly out that night so it was better for them to come to our house so they didn't have to drive an hour back home to just turn around later to go to the airport.  Plus it was nice to be able to spend time with Maggie since we haven't seen her in a long time!

It was nice and I was very sad to see her leave!  Hopefully we will be able to see her again soon along with Dan and Jamie!

My Menu

It's time for my weekly menu.  It is starting to warm up here more so I am looking forward to breaking out the BBQ more, it is nice when it starts to get warm out because the kids aren't cooped up in the house and get some fresh air and play hard out back!

Sunday:  Chicken Fried Steak, Mashed Potatoes, Corn and Rolls

Monday:  Kielbasa, Rice and Green Beans

Tuesday:  Crock pot Chicken and Dumplings (this is a new recipe for me and I found it here) and Salad

Wednesday:  Pork Chops, Noodles and Mixed Veggies

Thursday:  Hawaiian Burgers (Teriyaki, Pineapple and Swiss), Baked Beans and Tator Tots

Friday:  Crock pot Creamy Ranch Chicken (another new recipe for me and it was found here), served over Angel Hair Noodles, Salad and Garlic Bread

Saturday:  Tyson is probably going out with a friend, if so I am just going to pick up pizza for me and the girls.

Like I said I can't wait to start using the BBQ, For some reason I really struggle to be motivated and cook on Fridays, so I plan on alternating between the crock pot and the BBQ because for some reason if I am using either of those it is alot easier for me to cook and less likely we will be ordering out and we can save the money!  3 girls are expensive to feed, plus if Tyson is going out Saturday I would rather treat them to pizza (Little Caesars, $5.00 pizza--which Tyson won't eat)  Have a great week!

Sweet and Spicy Chicken Hoagie

I love it when I think of a new recipe and it actually turns out awesome!  Nothing stinks more then thinking a recipe is going to be good and it being awful.  So we eat a lot of chicken around here, but we are pretty sick of the same old recipes that I have been making.  So I was on a mission to make something new and hope that it would turn out. 

Last week I had made this dressing for Taco's that I had gotten from The Pioneer Woman.  When we put the dressing on the Taco's I thought that this would be good with burgers or even a warm sandwich.  So that is how I made this recipe, based on the sauce. 

I of course didn't take pictures because first I wasn't thinking and second I wasn't sure if it would turn out.  If you like sandwiches then trust me you want to make this!

Sweet and Spicy Chicken Hoagie

Ingredients:
Rolls
Grilled Chicken
Lettuce
Tomato
Cheese
1/4 cup Mayo (I used Miracle Whip)
1/4 cup Salsa
1/4 cup Sour Cream
Dry Ranch Seasoning
Hot Sauce

Grill the chicken up, season how you like, I used Garlic Power, Salt and Pepper and dice the chicken when it is done cooking.  While the chicken is cooking go ahead and make your sauce.  The original recipe called for a tablespoon of the ranch mix, but it was too much for me so I just sprinkled a little at a time till I liked the flavor.  Hot sauce is optional, and you put in as much as you like. 

Place your hoagie rolls under the broiler to crisp up, meanwhile slice your tomato and shred your lettuce (I was lazy and bought preshredded iceberg).  Take the rolls out of the oven and place the cooked diced chicken on the roll until the whole bottom is covered.  Spread the sauce all over the chicken and top with your choice of cheese (we used Swiss) and bake until the cheese is melted.

When the cheese has melted take it out of the oven, on the other side of the bun put more of the sauce (if you want, Ranch might be good too) lay down the lettuce and tomato and close the sandwich up and enjoy! 

This is something I will be making again!
